Ingredients:

  • 1/2 cup unsalted butter, cold and cut into cubes

For the Caramel Layer:

  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar (packed)
  • 1 can (14 oz) sweetened condensed milk
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon salt

For the Chocolate Layer:

  • 1 cup semisweet or milk chocolate chips
  • 1/4 cup heavy cream
  • 1 tablespoon unsalted butter

Instructions:

1. Make the Shortbread Base:

  • Preheat the oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
  • In a food processor, combine the flour, sugar, and salt. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom of the prepared pan, forming a compact, even layer.
  • Bake for 15-18 minutes, or until the shortbread is golden brown around the edges. Remove from the oven and let it cool completely in the pan.

2. Prepare the Caramel Layer:

  • In a medium saucepan, melt the butter over medium heat. Add the brown sugar, sweetened condensed milk, corn syrup, and salt. Stir until the mixture is smooth and the sugar is dissolved.
  • Bring the caramel to a simmer and cook for 5-7 minutes, stirring constantly, until it thickens slightly and turns a rich golden color. Be careful not to overcook.
  • Pour the caramel over the cooled shortbread base and spread it into an even layer. Let it cool to room temperature, then refrigerate for about 2 hours, or until the caramel is firm.
