Ingredients

  • 2 tablespoons brewed espresso, cooled

For the Coffee Soak:

  • 1 cup brewed espresso or strong coffee, cooled
  • 1/4 cup coffee liqueur (optional)

For Decoration:

  • Cocoa powder for dusting
  • Chocolate shavings (optional)
  • Espresso beans (optional)

Instructions

1. Make the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, cream the softened butter and sugar together until light and fluffy, about 3 minutes.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk and brewed espresso. Start and end with the flour mixture, and mix just until combined.
  • Divide the batter evenly between the two prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

2. Prepare the Mascarpone Filling:

  • In a large bowl, beat the mascarpone cheese with a hand mixer until smooth and creamy.
  • In a separate bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
  • Gently fold the whipped cream into the mascarpone mixture, then add the cooled espresso and mix until smooth. Refrigerate until ready to assemble.
